Quinoa Strawberry & Blueberry Pancakes

These pancakes are so perfect for a Sunday morning breakfast/brunch! They are packed with health benefits too but no one will know it! :) Haha....sneaky nutrition giving, nourishing you can rest, you gave them some healthy stuff. That should tide them over and now you don't have to feel bad about the pizza you order for dinner! :)

1 Cup Quinoa Flour

1/2 Cup Almond Flour

(Sub for barley flour if there is a nut allergy...however, do note barley is not gluten free)

3 tsp baking powder (there are gluten free baking powders)

1 tsp salt

1 1/2 tsp cinnamon

1 tbs raw coconut sugar

1 1/2 Cup Milk

2 tbs Coconut Oil

1/2 tsp vanilla

4 strawberries diced

12 whole blueberries

Mix all of the dry ingredients in a medium bowl. Add the wet ingredients and mix until combined. Lastly fold in your berries. Do not over mix. Heat your skillet and coat with a coconut cooking spray or butter and spoon your pancake batter into the hot skillet. Cook until nicely browned on each side. Arrange a variety of fruit and berries around the pancakes for serving and drizzle honey or agave on top. Enjoy!
